Arroz con Pollo (Chicken in yellow rice)
  • 2 1/2Pounds chicken breast(skinless and boneless) cut in cubes
  • 1 lime or sour orange
  • 4tbsp olive oil
  • 3cups parboiled rice
  • 7cups chicken broth
  • 1/2 green pepper
  • 1 medium onionpeel and finely chop
  • 110 oz can Rotel Tomatoes(mild)
  • 2envelopes complete seasoning (sazón completa)(with garlic, coriander and annatto)
  • garlic powderto taste
  1. Rinse the chicken breast and cut them in cubes small enough to be eaten with a fork. Season the chicken with the lime and garlic and let them rest in the refrigerator until ready to use. Using a saucepan, cook the chicken in very little oil at high heat until it changes color. In a rice cooker, place all the ingredients, stir well, cover and turn on. Once the rice is ready, stir with a fork and begin serving. Serve with maduros (sweet plantains).
