Cheese Jalapeño and Spinach Omelette
  • 4 egg whites
  • 1 yolk
  • 1/4cup jalapeño peppers
  • 6 spinach leaves
  • 3 to 4slices Panela cheese
  • Chopped onion to taste
  • salt to taste
  • Non stick cooking spray oil
  1. Using a bowl, whisk together the egg whites, yolk, jalapeño peppers, onion and salt until the ingredients are integrated.
  2. In skillet with lid using an oil-spray, add the mixture, covering the bottom in the form of an omelet, cover with the lid and let it cook.
  3. Add the spinach and cheese halfway to one end, using a spatula fold half the tortilla and let it cook until ready.
