Ingredients

Mexi-corn

cup
Mayonnaise

cup
Shredded Cheese
1/2
cup
Parmesan Cheese
Pepper Jack
1
jalapeño pepper
Toasted if you like it spicy
Instructions
In the oven broiler, toast the jalapeño.
Remove the skin, inside vein and the seeds, then cut the jalapeños in very small pieces.
Using an oven safe dish, mix all ingredients with a spatula and spread it uniformly
Bake at 350°F until it becomes a yellowish color, about 25 minutes.
Serve with tortilla chips.
