Ingredients
  • 12 to 3 pounds salmon fillet
  • 2large potatoespeeled and cut in slices
  • 1 tomatocut in slices
  • 2 tablespoons olive oil
  • 1cup fish broth
  • parsley, salt, and pepperto taste
Instructions
  1. In a baking-resistant bowl, cover the bottom with olive oil using a brush, and place the potatoes.
  2. Cover them with the fish broth or water, and bake it at 350 ˚F for 10 or 15 minutes.
  3. Place the tomato on top of the potatoes. Then place the salmon, previously seasoned with parsley, salt, and pepper, on top of the tomato.
  4. Sprinkle with a bit of olive oil, and bake it at 350 ˚F for 15 minutes
