Spaghetti with Shrimp

grated Parmesan cheese

Instructions
Boil the spaghetti according to the package recommendation, add the salt and set aside a cup of the cooking water.
Drain the pasta and add a little olive oil.
Roast the tomatoes for 10 minutes over medium heat.
Place the tomatoes, chipotle chili, cream cheese and 1/2 cup of water from the pasta in a blender and blend until everything is well incorporated.
Sauté the onion and garlic in the 4 tablespoons of oil, add the chipotle mixture and shrimp; cook over medium heat until the shrimp change color.
Add the pasta, mix until it is covered in the sauce and cook for a few more minutes.
Sprinkle grated Parmesan cheese on top and parsley.
