Spaghetti with Shrimp
  • 116 oz. spaghetti
  • 1tablespoon salt
  • 4tablespoons olive oil
  • 1lb shelled shrimp
  • 1 onion, finely chopped
  • 1tablespoon garlic
  • 4 tomatoes roasted (tomatoes)
  • 1/2Small can (4 oz.) Chipotles adobados
  • 1teaspoon salt
  • 1/2teaspoon pepper
  • 1/2pack (4 oz.) cream cheese
  • 4tablespoons vegetable oil
  • 1/2cup grated Parmesan cheese
  • 1/2bunch finely chopped parsley
  1. Boil the spaghetti according to the package recommendation, add the salt and set aside a cup of the cooking water.
  2. Drain the pasta and add a little olive oil.
  3. Roast the tomatoes for 10 minutes over medium heat.
  4. Place the tomatoes, chipotle chili, cream cheese and 1/2 cup of water from the pasta in a blender and blend until everything is well incorporated.
  5. Sauté the onion and garlic in the 4 tablespoons of oil, add the chipotle mixture and shrimp; cook over medium heat until the shrimp change color.
  6. Add the pasta, mix until it is covered in the sauce and cook for a few more minutes.
  7. Sprinkle grated Parmesan cheese on top and parsley.
