6 tilapia fillets
1 tablespoon garlic powder
1 pinch cayenne pepper
1 tablespoon of lemon zest
¼ cup onion cut in julienne strips
10 pickled garlic cloves
½ cup cherry tomatoes, halved
1 lemon juice
1 cup spinach
Salt and black pepper to taste
- Season the tilapia filets with garlic powder, cayenne pepper
(or fish seasoning) lemon zest, salt and black pepper. Set aside.
- Preheat the 12-inch Gourmet Skillet at medium high heat for 3 minutes or until you spray a few drops of water and it sprinkled on the utensil rolling around the surface without evaporating. Add onion and garlic cloves; sauté for one minute and stir constantly.
- Add the cherry tomatoes, lemon juice and seasoned tilapia filets. Add the spinach immediately and cover. Reduce the heat to medium-low and cook for 7 minutes, or until the fish is well done.
- Serve straightaway with favorite rice.
CHEF’S NOTE: You can substitute the cayenne pepper with fish seasoning.
