PREPARATION TIME: 7 minutes
YIELD: 4 servings
1 cup chicken or vegetable stock
1½ cups kernel corn
1½ pounds silken tofu
Ground Chile pepper and lime seasoning to taste
Sour cream to taste
Fresh farmers crumbling cheese to taste
½ cup kernel corn, toasted (optional)
- In the 2-quart Saucepan, add stock and kernel corn. Cover with the Redi-Temp® valve open. Cook at medium-high heat until it whistles, in about 6 minutes. Remove from the stove.
- Carefully transfer stock and kernel corn into the Royal Vort-X.
- Add silken tofu, cover and start blending on number 2 for about 15 seconds. Continue at maximum speed for 20 seconds, or until smooth consistency. After blending ingredients, use a Dutch Oven pot to finish the soup.
- Garnish to taste and enjoy.
CHEF’S NOTE: You may use the 8-inch Gourmet Skillet to toast kernel corn garnish. Cook it at medium-high for about 5 minutes, while constantly stirring.
