Ingredients
- 4 egg whites
- 1 yolk
- 1/4 cup jalapeño peppers
- 6 spinach leaves
- 3 to 4 slices Panela cheese
- Chopped onion to taste
- salt to taste
- Non stick cooking spray oil

Instructions
- Using a bowl, whisk together the egg whites, yolk, jalapeño peppers, onion and salt until the ingredients are integrated.
- In skillet with lid using an oil-spray, add the mixture, covering the bottom in the form of an omelet, cover with the lid and let it cook.
- Add the spinach and cheese halfway to one end, using a spatula fold half the tortilla and let it cook until ready.
