Plantain
  • 6 to 7 semi-ripe plantains
  • Butter and evaporated milk if needed to make the smash plantain softer.
  • 2 cups shredded cheese. (Cheddar and Mozzarella)
Stuffing
  • lbs ground turkey
  • 1 medium onion chopped
  • ½ bell pepper chopped
  • 3 cloves of garlic chopped or 1 tablespoon powder garlic
  • ¼ cup dry wine
  • 2 envelopes sazón with coriander and annatto
  • 8 oz tomato sauce (can be replaced by tomato juice)
  • 2 bay leaves
  • 4 oz Pimentos chopped
  • Spanish olive, cappers and raisins if desired
  • Salt & pepper to taste

Instructions
  1. Cook the plantains in water with salt to taste. To make the plantains look nicely yellow add some lime to the water.
  2. Make stuffing, smash the plantains, if necessary use butter and evaporated milk to make the smash plantain softer.
  3. Pre heat oven at 350F
  4. In a buttered 9X9 oven dish make one layer of mash plantain, cover the plantains with a layer of the stuffing and cover the stuffing with another layer of plantains. Sprinkle the chesses mixture over the plantains and bake till the shepherd pie is warm. If the ingredients are warm when the dish is prepared just use the broiler to melt the chesses.
