Ingredients
- 1 2 to 3 pounds salmon fillet
- 2 large potatoes peeled and cut in slices
- 1 tomato cut in slices
- 2 tablespoons olive oil
- 1 cup fish broth
- parsley, salt, and pepper to taste

Instructions
- In a baking-resistant bowl, cover the bottom with olive oil using a brush, and place the potatoes.
- Cover them with the fish broth or water, and bake it at 350 ˚F for 10 or 15 minutes.
- Place the tomato on top of the potatoes. Then place the salmon, previously seasoned with parsley, salt, and pepper, on top of the tomato.
- Sprinkle with a bit of olive oil, and bake it at 350 ˚F for 15 minutes
