  • 2 pounds tilapia fillets
  • 21 ounces oriental vegetables frozen (1 bag)
  • 1 medium onion chopped in slices
  • 1/2 teaspoon corn starch
  • 1/2 cup orange juice
  • 1 tablespoon orange peel
  • 2 tablespoons peanut oil
  • 2 tablespoons fresh ginger peel
  • 1 lemon cut in slices
  • 1/2 cup peanut grinded
  • salt and pepper to taste

Instructions
  1. Preheat the oven at 350 ˚F. Cut the aluminum foil in two large sheets. Place the vegetables at the center of the sheet, and on top place the onion in slices. Season the vegetables with salt and pepper to taste.
  2. Season the fish with salt and pepper, and place them on top of the vegetables.
  3. Dissolve the corn starch in the orange juice, and bathe the fish with that juice and the oil. Sprinkle the orange and the ginger peel on top of the fish, and place the lemon in slices lengthwise on top of the fish.
  4. Close well the aluminum foil, and bake for 35 minutes.
  5. Sprinkle the grinded peanut on top of the fish, when serving it.
