Ingredients
- 2 1/2 Pounds chicken breast (skinless and boneless) cut in cubes
- 1 lime or sour orange
- 4 tbsp olive oil
- 3 cups parboiled rice
- 7 cups chicken broth
- 1/2 green pepper
- 1 medium onion peel and finely chop
- 1 10 oz can Rotel Tomatoes (mild)
- 2 envelopes complete seasoning (sazón completa) (with garlic, coriander and annatto)
- garlic powder to taste

Instructions
- Rinse the chicken breast and cut them in cubes small enough to be eaten with a fork. Season the chicken with the lime and garlic and let them rest in the refrigerator until ready to use. Using a saucepan, cook the chicken in very little oil at high heat until it changes color. In a rice cooker, place all the ingredients, stir well, cover and turn on. Once the rice is ready, stir with a fork and begin serving. Serve with maduros (sweet plantains).
