- 4 eggplants
- 2 tablespoons oil
- 1 tablespoons vinager
- 1 tablespoons parsley
- 1 tablespoons butter
- 1/2 tablespoons salt
- 1/4 tablespoons pepper

Instructions
- Cut the eggplant in half, and take out the seeds. Then peel and place them and place on top of the marinate.
- Leave marinating for an hour.
- Cook them in the barbeque, bathing the eggplants constantly. You can cut them before serving.
Directions for the Marinate
- Mix together the oil, vinegar, salt, parsley and pepper.
- Place it in a bowl.

Fabulous recipe. I used a lightly flavor’s vinegar, and oregano (fresh) instead of parsley. Will definitely repeat this recipe!
