Ingredients
- 1 16 oz. spaghetti
- 1 tablespoon salt
- 4 tablespoons olive oil
- 1 lb shelled shrimp
- 1 onion, finely chopped
- 1 tablespoon garlic
- 4 tomatoes roasted (tomatoes)
- 1/2 Small can (4 oz.) Chipotles adobados
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 pack (4 oz.) cream cheese
- 4 tablespoons vegetable oil
- 1/2 cup grated Parmesan cheese
- 1/2 bunch finely chopped parsley

Instructions
- Boil the spaghetti according to the package recommendation, add the salt and set aside a cup of the cooking water.
- Drain the pasta and add a little olive oil.
- Roast the tomatoes for 10 minutes over medium heat.
- Place the tomatoes, chipotle chili, cream cheese and 1/2 cup of water from the pasta in a blender and blend until everything is well incorporated.
- Sauté the onion and garlic in the 4 tablespoons of oil, add the chipotle mixture and shrimp; cook over medium heat until the shrimp change color.
- Add the pasta, mix until it is covered in the sauce and cook for a few more minutes.
- Sprinkle grated Parmesan cheese on top and parsley.
