- 1 can Mexi-corn
- 1 cup Mayonnaise
- 1 cup Shredded Cheese
- 1/2 cup Parmesan Cheese Pepper Jack
- 1 jalapeño pepper Toasted if you like it spicy

Instructions
- In the oven broiler, toast the jalapeño.
- Remove the skin, inside vein and the seeds, then cut the jalapeños in very small pieces.
- Using an oven safe dish, mix all ingredients with a spatula and spread it uniformly
- Bake at 350°F until it becomes a yellowish color, about 25 minutes.
- Serve with tortilla chips.
